Ca Di Mat Fuente de los Huertos is a red wine made by CaÕ Di Mat with the Garnacha variety in the Sierra de Gredos, in the D.O. Vinos de Madrid.
Ca Di Mat, Òcrazy houseÓ in the Piedmont dialect, is the project run by husband and wife team Paolo Armando and Victoria Serrano together with Curro Bareno and Jesus Olivares in the Sierra de Gredos, west of the Community of Madrid. With the aim of showcasing the elegance of the Garnacha variety on the typical local granite soils, they make their wines with minimal intervention and maximum dedication.
Ca Di Mat Fuente de los Huertos comes from a plot lying 800 metres above sea level where the vines are planted on shallow granite soil with a high quantity of quartz. The vines are cultivated using environmentally friendly agriculture and the vineyard is surrounded by fruit trees and an orchard.
In the winery, the Ca Di Mat Fuente de los Huertos grapes macerate whole and gently for 60 days. Fermentation is spontaneous with native yeasts and the wine ages for 12 months in 500-litre French oak barrels.
