Matured with 50% whole bunch but with the stems removed, it has a floral bouquet with peony and iris scent fusing with the black cherry and wild strawberry fruit.
This 10-barrel cuvee is made from his three oldest parcels of village vines in Combes du Dessus, Aux Echezeaux and En Champs. The latter plot was planted in the 19th century, while the former two are a mere 80 to 90 years old. Arnaud also declassified a small amount of Premier and Grand Cru fruit to this blend. Deeper in colour, with real depth of aromatic intensity, this is concentrated and rich but with high-quality tannins which give finesse and elegance.
