Champagne Doyard
Champagne Doyard is truly something special. The Champagnes they produce are incredibly captivating and enchanting. It took us a couple of years to finally secure our first allocation, and while it may not have been large, we were over the moon to begin our collaboration with Guillaume!
From the vineyard to the cellar, everything at Champagne Doyard is approached with a hands-on attitude. Guillaume's goal is to harvest grapes at their peak ripeness to showcase the full expression of the terroir and the complete range of flavors. That's why there's no chaptalization, and the dosage is kept to a minimum.
Guillaume believes in allowing the wines to age gracefully on their lees. The entry-level Vendemiaire spends a minimum of 48 months, while the Revolution spends at least 60 months on lees! These Blanc de Blancs are both deep and rich, yet they maintain a wonderful tension and complexity that lasts for an incredible length.
On another note, the Coteaux Champenois Vertus Blanc (100% Chardonnay) and Ay Rouge (100% Pinot Noir) are quite possibly the best still wines I've had the pleasure of tasting to date. They're truly impressive in every way.
