60% 2017, 40% reserve wines from the previous two years
Most of the grapes (35 years old) are from Rilly la Montagne and Trois-Puis, there is also some Chardonnay from Verzenay Grand Cru.
Since 2010 no pesticide are used on the vines. Two horses are often walking in the vineyard. Manual harvest.
This cuvée is composed of grapes from the 2017 harvest, topped up by 30% of reserve wines from the previous two years. The young wines are vinified in enamelled tanks and a small proportion in oak barrels. Malolactic fermentation is allowed. The champagne ages 36 months before disgorgement. Low dosage.
