"Due to the high temperatures, there was little botrytis and a lot of acetate. So I decided to harvest 3 times in the space of three weeks. The blend gives a "C de Sec", aged 100% in barrels, extremely rich, exotic as desired and with an extraordinary length. A real dry Sauternes, or rather Barsac, because the limestone gave a lot of minerality to this wine. -Jean-Marie Guffens
