Fanny Sabre's Beaune 1er Cru "Chouacheux" comes from a small vineyard of 0.3 hectares planted in 1957 in the prestigious commune of Beaune. The grapes used are 100% Pinot Noir.
The Chouacheux vineyard is cultivated according to Fanny Sabre's usual biodynamic philosophy, with very low yields. In the winery, after a soft pressing, the must ferments spontaneously with indigenous yeasts. Fermentation proceeds very slowly, for one to two weeks, with daily pumping over for optimal extraction of color and tannins. The wine matures in second- and third-passage oak barrels for 15 to 18 months.
Beaune 1er Cru Chouacheux 2021 is a beautiful deep ruby red, almost garnet in color. The nose has ripe aromas of cherry and plum, with touches of leather and licorice. In the mouth it is powerful and concentrated, with velvety tannins and fresh acidity. The dominant sensation is of small red fruits with a savory and mineral streak typical of the terroir. The finish is very long, with spicy notes of clove and vanilla. This is a Pinot Noir of great complexity that needs a few years in bottle to express its full potential.
