Food pairing : Pair it with roast lamb; mushroom-based dishes or tender and delicate beef meats such as rib steaks, sirloin etc.
Terroir : Clay-limestone soil
Age of the vines : 40 to 50 years
Vinification : The grapes are harvested by hand. Maceration in stainless steel vats for 4 to 5 days. Soft pressing and natural fermentation (with indigenous yeasts) in oak barrels for 15 days. The wine is aged in new oak barrels for 15 to 18 months.
