Red Wine; 90%mencia-10%doç°½a blanca and palomino; From 7 different old plots,70-90 years old from the north part of Bierzo, clay-calcareous soils with some quartz in there; around 550 meters altitude; 3-4 days skin contact in concrete tanks and aged in the same concrete tanks for 7 months; non fined, no filtered and no sulfur added.
Vindemiatrix is the gateway into the fascinating world of La Senda. It is sourced from 7 old-vine parcels in the hills surrounding the village of Hervededo. Most of the parcels are red and white grapes inter-planted, so Diego co-ferments the different native grape varieties, as was done in the past. In this case, the blend is 80% Mencç©©a, 10% Palomino and 10% Doç°½a Blanca. The soils are mainly clay-calcareous, and the elevation is around 550 meters. The grapes are partially destemmed, macerated for a few weeks, and fermented and raised in unlined concrete tanks. The finished wine is bottled without fining or filtration, and no added SO2.
