At just 25 years old, Fanny Sabre took the reins of the Burgundian family estate in 2005, injecting a dose of energy and freshness into this wine adventure. She relies on the valuable teachings of her mentor for three years, Philippe Pacalet, to chart her own path.
Fanny Sabre is indeed a remarkable figure in the world of winemaking, particularly noted for her dedication to natural winemaking practices. Her approach involves minimal intervention, allowing the true expression of the terroir to shine through in her wines. This commitment to purity and authenticity is reflected in the exceptional quality of her reds and whites, whether they're vibrant Aligotés or the more complex Premiers Crus.
Alvina Pernot, granddaughter of Paul Pernot (Domaine Paul Pernot)- one of the biggest landowners in Puligny Montrachet,started her own “micro-négoce” eponymous label within Puligny-Montrachet in 2018, alongside her husband Philippe Abadie. The focus is almost exclusively on Chardonnay, with only one red wine from the Bievaux vineyard in Santenay (a south-facing plot that is among the highest in the village). They are particularly focused on sites within Puligny-Montrachet, with an increasing number of Premiers and Grands Crus. Although Alvina and Paul Pernot share many of the same vineyards, the wines are very different. Alvina and Philippe want to make the wines they love to drink. Versus the very traditional, richer style of Paul Pernot, their wines are leaner and more mineral. They tend to pick a few days before the family domaine, pressing more gently (favouring vertical presses), using less new oak (as well as playing with both amphorae and glass vessels for ageing), little bâtonnage and lower sulphur levels. In essence, Alvina Pernot’s wines are a testament to her skill and passion, offering a delightful experience that’s both elegant and enjoyable.
This estate is a little-known jewel, making wine in Pommard for 5 generations, farming organically since 1999. 6 hectares in cultivation has now grown to more than 8, thanks to a family inheritance, and Joannès has taken over prime responsibilities from his father Thierry. Their philosophy is to maintain a healthy terroir. No yeasting, no reverse osmosis, not too many technical interventions and not too much wood, so as not to alter the taste of the wine. This is very much a family Domaine, with Thierry’s wife Estelle, Joannès’s mother, being hands-on throughout the vineyard year, which includes cultivating micro-organisms to vivify the composts. From 2019, higher proportion of whole bunches were retained in the red wines than in the past, and racking from barrel is done before the autumn, to prepare for bottling in November. The pursuit of harmony is constant here.
