Vineyard: Located in the Les Millandes Premier Cru vineyard of Morey-Saint-Denis, this parcel sits at elevations between 220 to 260 meters on east-southeast facing slopes. The soils comprise limestone, marl, gravel, and red silt, interspersed with large round stones known as tetes de loups. Vines average 30 to 60 years of age. Sustainable viticulture practices include soil tilling, composting every three years, and careful pruning to control yields and ensure optimal grape maturity. _
Winemaking: Grapes are hand-harvested and sorted twice on a conveyor belt. Depending on the vintage, 70% to 100% of the grapes are destemmed. A cold maceration lasts five to seven days, followed by fermentation with indigenous yeasts over ten days, incorporating regular punch-downs and pump-overs. The wine is aged for 15 to 18 months in 228-liter French oak barrels, with 33% new oak. Bottling and racking are conducted according to lunar cycles, and the annual production is approximately 2,500 bottles. _
Tasting Notes: Exhibiting a ruby to garnet hue, this wine presents dominant red fruit aromas, particularly raspberries and Morello cherries. The palate is robust and structured, with pronounced tannins balanced by fruit and acidity. It showcases a powerful, mineral, and spicy profile with substantial body, making it an excellent match for meat dishes, game stews, or aged cheeses.
