Riesling Scherwiller is a white wine produced by Domaine Achillee in Scherwiller, Alsace, and obtained from pure Riesling grapes, harvested manually. These come from old vineyards located in very light, slightly clayey soil. Macerations lasting a few hours with spontaneous fermentation by indigenous yeasts, aging for one year in steel. It is bottled without the addition of sulfur dioxide and does not require filtration or clarification. Riesling Scherwiller has a decidedly fragrant and mineral nose, especially fruity, with hints of citrus, peach and apricot, as well as dried fruit such as almonds and hazelnuts. In the mouth it is fresh and enveloping, savory and persistent, with a citrus and spicy finish. Perfect for Japanese cuisine, it has great aging potential.
