Age of vines: planted in 1989 by Amos' s grandfather. Manual harvest with boxes of less than 15 kg, very slowly and selectively in order to pick perfectly ripe grapes only. Grapes are gently pressed direct to stainless steel tank for fermentation. Around 3 to 5% of the stems are added back to protect against the flatness that can happen within inox. The wine stays there for six months un-touched before racking by gravity and bottling. Pear and Citrus fruits. Ripe, saline and savoury, it’s a very unctuous wine.
